Destroying a co-processor normally increases the AI Progress by 20. However, when you destroy the last co-processor, the AI Progress instead takes a massive drop of 120 (105 on Diff 8+, 90 on Diff 9+), so hitting all four of them simultaneously is ideal.

How to Efficiently Destroy
Kill them all within a few minutes of each other, hopefully just after fending off a set of waves so that there's no chance a wave will spawn before you can kill the last one and reverse the AIP gain. Spirecraft Jumpships are particularly excellent for this. If you don't have spirecraft enabled, clear a tachyon-free path to them in advance and then quickly strike them all with cloaked ships. High-mark Raid Starships are also very effective at that kind of task.
Consequences
There are several implicit consequences for destroying the four co-processors. While the effective AIP will decrease, the total AIP will increase. This has the side effect of increasing the floor and may cause the AIs to unlock new types of ships and Guardians. This also gives 60 Hacking Points, which can be used to download or corrupt the potentially new AI's unlocks.
